- Shrimp Scampi with Curry Sauce
- (Scampi Alla Salsa Di Curry)

- Ingredients:
-
20 langoustines or prawns
3 and 1/2 fl oz (100 ml) dry white wine
3 and 1/2 fl oz (100 ml) double cream
2 shallots, finely chopped
1 teaspoon curry powder
1 carrot (optional)
1 onion (optional)
1/2 bunch of fresh parsley
1/2 bunch of fresh thyme
1 and 1/2 oz (40 grams) butter
Juice of 1 lemon, strained
Salt and pepper
Directions:
Bring a large saucepan of water to a boil with the herbs (along with the carrot and onion if using).
Add the langoustines or prawns, bring back to a boil and cook for about 5 minutes.
Drain, peel and devein.
Melt the butter in a pan.
Add the shallots and cook over a low heat, stirring occasionally, for 5 minutes.
Stir in the curry powder.
Pour in the wine and cook until it has reduced by half.
Stir in the cream and season with salt and pepper.
Arrange the langoustines or prawns on a warm serving dish.
Sprinkle with the lemon juice and spoon the sauce over them. Serves 4.
