- Sardine Rolls
- (Involtini di Sardine)

- Ingredients:
-
1 and 3/4 lbs (800 grams) sardines, scaled, cleaned and boned
4 oz (120 grams) pancetta, thinly sliced
1-2 tablespoons extra virgin olive oil, plus extra for brushing
2 bay leaves
1 fresh thyme sprig
Juice of 1 lemon, strained
Salt and pepper
Directions:
Preheat the oven to 180°C (350°F) Gas Mark 4.
Brush an oven proof dish with olive oil.
Season the sardines with salt and pepper.
Wrap each in a slice of pancetta and secure it with a cocktail stick or toothpick.
Place the rolls in the prepared dish.
Add the bay leaves and thyme and pour in the lemon juice and olive oil.
Bake for about 14-16 minutes. Serves 4.
