- Octopus In Red Wine
- (Polpi al Vino Rosso)

- Ingredients:
-
2 and 1/4 lbs (1 kg) octopus, cleaned and cut into pieces
- 1 fresh sage leaf
1 fresh rosemary sprig
- 1 onion, chopped
1 garlic clove
- 3 tablespoons extra virgin olive oil
5 tablespoons red wine
2 bay leaves salt and pepper
Directions:
Heat the olive oil in a saucepan.

- Add the onion, rosemary, garlic and sage.

- Cook over a low heat, stirring occasionally, for about 5 minutes.
Add the octopus and cook for a few minutes more.

- Pour in the wine.

- Add the bay leaves.

- Season with salt and pepper to taste.
Simmer over a very low heat for about 1 and 1/2 hours.
Serve cold or hot. Serves 4.
