- Watermelon with Rum
|

- Ingredients:
-
4 and 1/2 lb (2 kg) watermelon
3 and 1/2 oz (100 grams) caster or superfine sugar
2 tablespoons rum
2 tablespoons brandy
Directions:
Cut a slice off the top of the watermelon about a quarter of the way down and reserve.
Scoop out the flesh from the large part of the watermelon and discard the seeds.
Dice the flesh, place it in a bowl and stir in the sugar, rum and brandy.
Spoon the mixture into the watermelon shell and cover with the reserved lid.
Chill in the refrigerator for 2-3 hours before serving. Serves 6.
