- Tuna Sauce
- (Sugo al Tonno)

- Ingredients:

- 9 oz (250 grams) canned tomatoes
1 garlic clove
4 oz (120 grams) canned tuna in oil, drained
2 tablespoons extra virgin olive oil
1 anchovy (salted)
Salt

- Directions:
-
- Take the salted anchovy, remove its head, clean and fillet it.
Soak it in cold water for about 10 minutes, drain, and finely chop it.
Add the tomatoes and their juices into a saucepan, add the garlic, a pinch of salt, and bring to a boil over a medium heat.
Cook for 15 minutes, then lower the heat, mash the tomatoes with a wooden spoon and cook until the liquid has slightly reduced.
Remove the saucepan from the heat.
Remove and throw away the garlic.
Flake the tuna with a fork and stir into the tomato sauce.
Add the olive oil and anchovy and spoon over very hot pasta. Serves 4.
