- Tagliatelle with Prosciutto, Peas and Cream
- (Tagliatelle Con Prosciutto, Piselli, e Crema)

- Ingredients:

- 2 cooked ham or Prosciutto slices, diced
- 7 oz (200 grams) shelled peas
- 1 onion, sliced very thinly
- 1 oz (25 grams) butter
2 tablespoons extra virgin olive oil
3 and 1/2 fl oz (100 ml) double cream
10 oz (275 grams) fresh Tagliatelle pasta
2 oz (50 grams) Parmigiano cheese, freshly grated

- Directions:

- Heat the butter and olive oil in a saucepan.

- Add the onion and cook over a low heat, stirring occasionally, for about 5-7 minutes until softened.
Add the peas and cook, stirring occasionally, for another 20 minutes.

- Stir in the cream.
Cook for 5 minutes, then add the ham or prosciutto.
Cook the Tagliatelle pasta in a large pan of salted, boiling water until 'al dente', then drain and toss with the Parmigiano cheese and hot sauce.
Transfer to a warm serving dish. Serves 4.
