Sweet and Sour Pork Stew
Sweet and Sour Pork Stew
(Spezzatino In Agrodolce)
 
 
Ingredients:

1 lb 5 oz (600 grams) boneless shoulder of pork, cut into cubes
3 red peppers, halved, seeded and finely chopped
3 green peppers, halved, seeded and finely chopped
1 onion, finely chopped
4 gherkins, drained and finely chopped
2 oz (50 grams) butter
4 tablespoons dark soy sauce
4 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
2 fl oz (50 ml) brandy
1 oz (25 grams) sugar
Salt and pepper

Directions:

Prepare the Sauce:
Heat half the olive oil and half the butter in a frying pan.

Add all the vegetables and stir fry for a few minutes.

Add 5 tablespoons water and the vinegar.

Sprinkle with the sugar and season with salt and pepper.

Simmer for about 15-20 minutes.

Prepare the Pork:
Halve, seed and finely chop the green and red peppers.

Mix together the brandy and soy sauce in a dish.

Add the pork and leave to marinate for about 2 hours.

Drain the pork.

Heat the remaining butter and the remaining oil in a pan.

Add the pork and cook over a medium heat, stirring frequently, until browned all over.

Pour the sauce on top of the pork, stir well and simmer for about 30 minutes.

Serve the stew with boiled rice. Serves 4.
