- Almond Coated Sole Fillets
- (Filetti di Sogliole alla Mandorle)

- Ingredients:
-
8 sole fillets, skinned
Plain flour, for dusting
2 eggs
4 oz (120 grams) almonds, coarsely chopped
3 oz (80 grams) butter
Salt and pepper
Fresh flat-leaf parsley sprigs, to garnish
Directions:
Lightly dust the fish with flour.
Beat the eggs with a little salt and pepper in a shallow dish.
Place the almonds in another shallow dish.
Melt the butter in a frying pan.
Dip the sole fillets first in the egg and then in the almonds to coat.
Add to the pan and cook for a few minutes on each side.
Transfer to a warm serving dish and garnish with parsley sprigs.
