- Orange Sauce

- Ingredients:

Rind of 1 orange, finely pared
7 oz (200 grams) orange jelly
7 oz (200 grams) apricot jam
2 tablespoons orange liqueur
Directions:
Slice the orange rind into fine strips and blanch in boiling water for 5 minutes, then drain and dry with kitchen paper.
Press the orange jelly and apricot jam through a fine sieve into a saucepan and stir in the orange liqueur.
Add the orange rind and heat gently, stirring constantly.
Note: This sauce may be poured, hot or cold, on to ice creams and creamy desserts.
