- Almond Curls

- Ingredients:
-
5 oz (150 grams) ground almonds
3 oz (75 grams) caster or superfine sugar
Pinch of ground cinnamon
Grated zest of 1/2 an unwaxed lemon
2 egg whites
Directions:
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Grease and line several baking trays with baking parchment.
Mix together the almonds, sugar, cinnamon and lemon zest.
Whisk the egg whites until stiff then fold into the almond mixture.
Put the mixture in a piping bag fitted with a large nozzle and pipe out on to the baking trays in an S-shape, 2 inch (5 cm) long. Allow plenty of space for spreading.
Bake in the oven for 10 minutes until golden.
Transfer to a wire rack and leave to cool. Makes 18.
